The versatile white meat comes from the claws and legs of the crab. it has a delicate, sweet flavour, a sweet aroma and a naturally flaky texture.

The brown meat comes from the body of the crab. It has a higher natural fat content and is extremely high in omega-3. It has more of a pâté like texture and is rich and full of flavour.
