The flesh is bright white ,firm and meaty with large flakes that hold together well when cooked.
it has a mild clean and subtly sweet flavour making it ideal for pairing with both delicate and strong flavours
Ideal for roasting or baking as a centrepiece often served on the bone for enhanced flavour and moisture retention.
It’s a good source of Niacin, Vitamin B6, Magnesium and Phosphorus, and a very good source of Protein, Vitamin B12 and Selenium.
